The salsa was a hit! It was completely gone by the end of the session. Best quote of the evening? MA saying “I don’t like any of the ingredients but this tastes really good!”
Second best quote of the evening was actually one of my own…as our party was attacked by a hydra – “Throw my horse in front of it, I don’t care, it’s a rental.”
Watercress and Avacado Salsa
One bunch of Watercress
One small red onion
One clove of garlic (this is what the recipe calls for, I just used a couple of the bulbs)
Juice of one lime
One Tablespoon of White Wine Vinegar
One Large Avacado
Finely chop the watercress (leaving out the larger stems), onion and garlic. Combine with the lime and vinegar and mix well. Dice the avacado and fold in, taking care not to mush it up. Serve immediately over fish or chicken or with tortilla chips.
I used my hand mixer for all the chopping. Prep and cleanup were a breeze.
